RON'S FAVOURITE CHILI

1. 1 1/2 cup dry pinto beans washed, soaked overnight in water, drained and cooked with enough water in a pressure cooker until soft ( about 20 minutes over medium heat), or use 2 cans of canned beans.

2. 1 1/2 pounds extra lean ground beef cooked, drained with fat separated lightly with a fork or fat cutter.

3. The following vegetables chopped and lightly browned in 1 T of olive oil.

    1 onion, 2 stalks of celery, 2 cloves of garlic, 2 tomatoes and 1 jalapeño pepper

4. 1 (796 ml) can of diced tomatoes.

5. 2 T of vinegar.

6. Salt and pepper to taste

7. Drain cooked beans, add all other ingredients and cook at medium heat for 20 min.
